I have grown some Witloof chicory this year, when do I lift the roots for forcing in a greenhouse?

Chicory roots can be lifted in Nov / Dec for forcing under cover.

Select roots with a diameter across the top of about 50mm(2") discarding anything smaller.

Forcing can be carried out in an airing cupboard or in a heated greenhouse.

The white 'chicons' should appear within a few weeks ready for use in salads.
